The salad mix was marvelous and lunar white carrots made a wonderful soup along with their tops, a new experience for us! Edible flowers were a huge hit and another first. The beets with greens will be the next! I just wanted to let you know how pleased I am with the quality, variety, and amount of vegetables we received. If you are looking for a chance to enjoy the most delicious heirloom vegetables picked fresh right from the earth the day you bring them home, then you need look no further than WE CSA. I joined the CSA for the winter season and received my first share in late November just in time to make a beautiful salad with the gourmet salad mix and some amazing rare heirloom radishes called "Helios" for Thanksgiving. I've never tasted radishes like this before and they made a beautiful addition to the salad.It is reassuring to know that I can reap the benefits of delicious and nutritious heirloom vegetables grown in soil that has been lovingly nourished and cared for and they only traveled a few short miles to reach my home. Melon, squash, "Bulls Blood" beet greens, carrots, turnips, and greens with names I can hardly pronounce. It gets better every week, and all grown without the use of harmful pesticides.I give WE CSA a thumbs up for the compassion, commitment, care, and hard work that goes into the art of bringing delicious and nutritious heirloom vegetables to a local community. Such pleasure to watch them grow each day. The first green onions are now about 10-12" tall.  The second green onions are slower growing, about 3" tall. Ate the fennel tonight, barely cooked for such a wonderful flavor.&lt;/span&gt;&lt;br /&gt;&lt;span style="color:#003333;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="color:#003333;"&gt;It was a joy to eat such fresh, flavorful and tender treats. The beets reminded me of my childhood days in our own home garden. We ate a lot of beet tops then moved on to the bottoms. I especially enjoyed the heirloom broccoli that had a nice pungency similar to the Chinese broccoli gai lan, one of my favorite veggies. &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color:#003333;"&gt;Looking forward to tomorrow's treats - its like Christmas in the summer!!! The Mustard Seed is sooooo convenient. Love the way you keep your produce cool under the damp burlap bags. I was absolutely sure I didn’t like beets and, I must confess, have bartered them to friends and even shared them with the porcupines at the wildlife rehab facility where I volunteer &lt;em&gt;(they love them).&lt;/em&gt; Tonight I baked them &lt;em&gt;(like a baked potato)&lt;/em&gt; and THEY WERE WONDERFUL! &lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="color:#003333;"&gt;I love turnips, and the flavor was similar. I also made a wonderful quick stir fry with collard greens, fresh spinach, purple onions, garlic and some pac choi from last week… yum yum. I even went out on a limb and looked through all my vegetarian cookbooks and made a fennel recipe. It was great! Fennel, tomatoes, shallots, garlic and fresh basil sauted and topped with bread crumbs and baked. I actually enjoyed it as well. &lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="color:#003333;"&gt;I’m currently fat and happy and feeling quite smug about the whole thing. Please know that I would never have tried these wonderful concoctions without my CSA. Thank you, thank you. I’ll share the beets and fennel with family for Easter dinner tomorrow. A stupendous insight of civilizations past has now been confirmed by today's investigative, nutritional sciences. They have shown that what was once called 'The Doctrine of Signatures' was astoundingly correct. It now contends that every whole food has a pattern that resembles a body organ or physiological function and that this pattern acts as a signal or sign as to the benefit the food provides the eater. Here is just a short list of examples of &lt;strong&gt;Whole Food Signatures&lt;/strong&gt;.&lt;br /&gt;A sliced &lt;strong&gt;Carrot&lt;/strong&gt; looks like the human eye. &lt;/span&gt;&lt;span style="color:#003333;"&gt;The pupil, iris and radiating lines look just like the human eye...and science shows that carrots greatly enhance blood flow to and function of the eyes&lt;br /&gt;A &lt;strong&gt;Tomato&lt;/strong&gt; has four chambers and is red. I told my husband we'd either be more in love or have killed each other by the end of the spring harvest, that's how new this all is for us. I'm keeping a CSA diary. We're cooking together, eating real meals, food I never even heard of. Each evening a ceremony.
